On-site brewing is slated to begin Summer 2016 using locally-sourced ingredients to create unique flavors. In the meantime, we are featuring a variety of Wisconsin craft brews with an emphasis on brewers from Central Wisconsin. The list of brews changes daily, and the announcement of what is available has become a fun in-house event (be prepared to ooooh and ahhhh!). In addition, we host a variety of Food Trucks on weekends, select weekdays, and for special Sawmill Brewery Events. There’s a story behind practically every piece of wood at the Sawmill Brewing Co.The brewery is new, but much of the decor comes from reclaimed materials or references Merrill’s history in the lumber trade. A tree that came down in the tornado that ripped through Merrill in 2011 forms the actual bar. There are 13 species of wood in the flooring. And some of the tables come from old floor joists in the tavern, removed to make a loft space over the bar…
